Tuesday Treats- Wowie Zowie Zucchini Bread

Every summer we plant a garden that provides us with the most amazing organic vegetables! One of the easiest vegetables to grow is zucchini and our zucchini plants always take off.  If we have more than we can eat then I always try to freeze the extra so the garden gifts last us all year!

Now that it is garden planting time again, I am trying to use up all of last years crop.  One of my favorite recipes is for chocolate chip zucchini bread, which is so good we now call it “Wowie Zowie Zucchini Bread”!  One bite and you will totally get it!  As an added bonus, the kids will have no idea there is a vegetable hiding in their snack!

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1/2 to 1 full bag of semi sweet chocolate chips (depending on your preference)

Directions:

  1. Preheat oven to 325 degrees F.  Grease and flour two loaf pans.
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl.  Add sifted ingredients to the creamed mixture, and beat well.  Stir in zucchini and chocolate chips until well combined.  Pour batter into prepared pans.
  4. Bake 40-60 minutes or until toothpick inserted in the center comes out clean.  Cool in pan for 20 minutes.  Remove from pan and cool completely.

Tuesday Treats- Mac N’ Cheese

I recently attended the Creative Estates conference, and aside from meeting some amazing women, crafters, and handmade business owners, I walked away with a recipe for the most incredible Mac N’ Cheese I have ever tasted.  As a self proclaimed conesuer of Mac N” Cheese, I have developed quite a fine pallet over the years, so when I say it is great Mac N’ Cheese, I really mean it!

So do ya want the recipe?  Do ya, do ya?  Ok here you go!   Now you can throw away that orange powder variety and whip up a batch of this for your kiddos.  You can thank me later when you win parent of the year!

Resurrection Rolls {tutorial}

Last week one of my son’s religious education project was to make resurrection rolls.  Not only are these rolls a very tasty treat, making them is a fun kitchen craft for you to do with your kids that will also help to teach them the meaning of Easter!

Gather your ingredients:

  • 1 package crescent rolls
  • melted butter
  • large marshmallows
  • cinnamon and sugar mixed together

Preheat oven to 350 degrees

Give each child a crescent triangle. (The crescent roll represents the cloth that Jesus was wrapped in.)

Give each child a marshmallow. (This represents Jesus and His purity)

Dip the marshmallow in melted butter. (This represents the oils of embalming)

Dip the buttered marshmallow in the cinnamon and sugar.  (This represents the spices used to anoint the body of Jesus)

Place the marshmallow in the center of the crescent triangle.

Wrap the coated marshmallow tightly in the crescent roll by bringing the sides up and around the marshmallow to seal it inside.  Pinch the seams well. (This represents the wrapping of Jesus’ body after death)

Bake for 10-12 minutes (The oven represents the tomb, the door is the boulder.  While the rolls are baking, pretend it has been 3 days and 3 nights).

When the rolls have cooled slightly, the children can open their rolls (cloths) and discover that Jesus (the marshmallow) is no longer there,

He Is Risen!
